Stapled booklet nightmare? (not Leter-Half, etc...)

I am a recent interior design graduate printing my portfolio. I have chosen 13 x 19 inch sheets, (landscape, folded in half) making each page 9.5 x 13 inches portrait. The issue I am having is that when I started the project, obviously I did not choose one of the Letter-Half or Legal-Half page size presets– I simply created a custom size (9.5 x 13") so that my facing pages would be the correct size.

My confusion begins when I go to File / Print Booklet... and I choose the recommended 2-up Saddle Stitch. As you may have guessed, my wide-format printer does not have any duplex options. I went ahead and printed the first run of spreads this way to see if simply flipping the stack and printing again on the other side would yield the desired double-sided results. When I started flipping through them and comparing that would happen, I really got confused - The spreads will alternatively not make sense (or correspond to what is printed on the other side). Why can't I just use the nifty 2-up Saddle Stitch collating tool to export a High-Quality Print PDF and shuffle the spreads as necessary for a "side 2 print" run. My only options are post-script or direct to printer!?

I would be happy to provide a PDF or .indd file if it helps.

Any advice would be greatly appreciated.

Technical stuff: I am using 28lb copy  paper have about 32 pages (16 spreads) so I am not concerned about creep or blowout.
